Monsoon Taste Buds !!!

The drizzling rain has started after the scorching summer heat. Every evening it seems to have a coffee and read books alongside. Did you ever think of relaxing your taste buds to something healthy and yummy for the season? We hope not.

So here we are unleashing some recipes from the treasure book of Dreamly Das. She a self made personality who loves cooking. She is basically in to cooking healthy and delicious dishes that helps on a healthy lifestyle. Her objective has been always to shake up the taste buds with indianness.

Coconut pineapple pie

Ingredients 1.dessicated coconut 2 cups 2.fresh cream 200ml 3 sugar -to taste 4.finely chopped pineapple-about 1/2 cup 5.pineapple essence 6.dry fruits chopped 7.ghee -3 tbsps

Procedure

Heat ghee in kadai Add the coconut dessicated and stir in low flame. When it turns light brown in color add sugar and mix properly. When you start getting the nice smell of fried coconut add the cream pre mixed with little water . Stir constantly so that lumps do not form. Fry until you find it sticking to the bottom of the pan. Add the chopped pineapple and 2-3 drops of the essence. In a plate grease with oil/butter and lay the batter evenly . Keep it in room temperature until it cools down. Add the dry fruits on it. Putting it immediately to the freezer will take away the creamy affair and make it hard. Once it sets down put it in the freezer. After 2-3 hours take it out and cut it to pieces. Your coconut pineapple pie is ready. Serve it cold.

Caulirice- as the name sounds, it is a rice made of cauliflower. Health conscious people often search for alternatives of rice to go chicken or curry.

Ingredients Cauliflower- 2 small (to serve 2) Salt to taste Chopped onions -2 tbsp Biriyani masala Whole garam masala Garam masala powder Red chilli powder-1tsp Almonds- 3-4 chopped

Procedure

Just take the florets. Keep the stem as less as possible and grind them in the grinder (use the dry grinder). It should not become a paste. It should be like rice consistency. Add two cups of water in a pot and let it boil. Add the ground cauliflower and 1 big spoon of salt and let it cook for about 5 mins, so that the rawness of cauliflower vanishes and the water is absorbed completely. Making it a perfect rice. Now the rice is ready. Heat 2 tbsp of oil/ghee in a pan. Temper with whole garam masala and add whole cumin seeds. Add the chopped onions. Once it smells add the red chilli powder and the biriyani powder. Just a little water so that it does not burn the pieces and then add the rice. Add the nuts. I used almonds. You can use raisins if u want. I didn't use as this is a completely low carb food specially for people on diet. Fry and mix all of them. You can add sugar or sugar substitute to taste. I used stevia here. Add garam masala powder and turn off the flame and cover it for 2-3 mins before serving. Serve with curry and enjoy your new found rice -caulirice!!!!

Baked cabbage rolls

Ingredients Cabbage leaves-2 Paneer -100 gms Capsicum-1/2 of one medium size Garlic -chopped finely Green chillies Butter Oil 2-3 spoons Salt - as per taste Sugar-1tsp Cumin seeds- a pinch Garam masala powder

Process

Take two cabbage leaves and wash properly. Remove the hard stem in between. Heat water in a pot and once it comes to boil put the cabbage leaves for two mins in the boiling water and then strain the water and put cold or normal water. In short just blanch the cabbage so that it becomes little soft and loses the raw smell.

Smash the paneer. Heat oil in a pan. Temper with cumin seeds and then add the chopped garlic. Once it starts browning add the capsicum and the smashed paneer, salt, little sugar, tomato ketchup and fry till oil starts separating. Add the garam masala and turn off the gas and let it cool

Each cabbage leaf after being separated from the stem is divided into two now. So it will make 4 rolls. Wrap up the paneer in the cabbage. If you are doing it for the first time then you can also use a string to keep it attached or just wrapping does it . Grease the pan or the bowl with butter and place the rolls. And then microwave it for 5-7 mins and then grill for 1 min to get the little burnt smell of butter infused. You can also shallow fry it in pan in high flame .

Try the cabbage rolls. Definitely healthy and will satisfy your cravings for high calorie rolls !!!
